Green pasta salad

Ingredients:

  • 200 g broccoli
  • 100 g cucumber
  • 2 dl pasta
  • 1 dl green peas
  • 1 avocado
  • 200 g feta cheese
  • fresh herbs, parsley
  • 2 hands fresh spinach
  • 4 tbsp cashews

Vinaigrette:

  • 3 tbsp olive oil
  • 1 tsp sesame oil
  • 1 tbsp vinegar
  • 1 tsp honey
  • salt
  • paper

Method:

  1. Cook the pasta according to the package instructions.
  2. Cut the florets from the broccoli and parboil together with the green peas.
  3. Chop cucumber and avocado.
  4. Mix all the ingredients for the vinaigrette.
  5. Mix all ingredients for the salad, broccoli, cucumber, pasta, peas, avocado, spinach and cashews. Place in bowls. Top with crumbled feta cheese and fresh herbs.
  6. Sprinkle the vinaigrette over the salad and toss to mix all the different flavours. Serve!
