Ingredients:
- 200 g broccoli
- 100 g cucumber
- 2 dl pasta
- 1 dl green peas
- 1 avocado
- 200 g feta cheese
- fresh herbs, parsley
- 2 hands fresh spinach
- 4 tbsp cashews
Vinaigrette:
- 3 tbsp olive oil
- 1 tsp sesame oil
- 1 tbsp vinegar
- 1 tsp honey
- salt
- paper
Method:
- Cook the pasta according to the package instructions.
- Cut the florets from the broccoli and parboil together with the green peas.
- Chop cucumber and avocado.
- Mix all the ingredients for the vinaigrette.
- Mix all ingredients for the salad, broccoli, cucumber, pasta, peas, avocado, spinach and cashews. Place in bowls. Top with crumbled feta cheese and fresh herbs.
- Sprinkle the vinaigrette over the salad and toss to mix all the different flavours. Serve!
