One-pot Bolognese
This is a self-cooking one-pot Bolognese recipe. It serves 2 and contains many of the nutrients you need when you are pregnant, including iron from spinach, whole grains and lean minced meat, and folate and calcium from spinach and pasta. A great meal to be enjoyed either for dinner or as leftover lunch. Yum!
Ingredients:
- 250 g whole grain spaghetti
- 400 g lean minced meat
- 1 can tomato pasta sauce, 500 g
- ½ brown onion, chopped
- 1 garlic clove, crushed
- 1 tbsp canola oil
- 1 tbsp Chinese soy sauce
- 1 tsp thyme
- 1 litre water
- 1 small bag of spinach, 65 g
- salt
- pepper
Method:
- Chop the onion and cook in oil in a frying pan.
- Add the minced meat, breaking it apart with a wooden fork and cook until cooked through.
- Add pasta sauce, garlic, soy sauce, thyme, water and spaghetti. Bring to the boil and then simmer covered on low heat for 15 minutes or until the spaghetti is cooked. Stir occasionally.
- Season with salt and pepper.
- Toss in spinach and serve.
